Sausage Sandwich

This combines pretty much everything I like about summer sausages into the perfect sandwich.


I love a sausage in a bun, covered with sauerkraut, all condiments…and maybe some fried onion bits. You really can’t go wrong.

I learned that toppings are key on a visit to Iceland, they put everyyything on them and it’s amazing. So, if you like this sort of thing you should visit Reykjavik, they have some tasty hot dog stands!

For mine I used some fresh flax seed french bread, instead of those sub-par grocery store buns. It added a whole other level of goodness.


This serves two.


4 slices of french bread, or 2 buns

2 polish sausages

Optional toppings:

1/2 cup of sauerkraut



an egg


crispy fried onions


Cook sausages as per recommended instructions. Place sauerkraut in a pot with just enough water to cover. Bring to a boil, and drain (This is just to warm it up, and soften a bit. It can be skipped). Assemble the sandwiches, and serve with perogies/fries/potato salad/etc.
